Exercise of the day: Foam roll snow angels

Feeling stiff from being inside for the last few months? Grab a foam roll and get your upper back and chest loosened up!

This is a great exercise for stiff shoulders, upper back, neck, and chest. We all love an exercise where you get to lie down!

 

Position yourself with the foam roll along the center of your spine, with one end under your head and the other under your pelvis. With your palms facing toward the ceiling and your arms straight, make a snow angel motion slowly. Focus on relaxed breathing and feel the stretch through your pec muscles (on your chest on the sides of your sternum/breastbone). Repeat for 12 repetitions, take a break, and do another two sets. This can be done every day and is a good warm up for any physical activity.

St. Patrick’s Day Broccoli Pasta:

Planning ahead for green food for St. Patrick’s Day? Look no further! This recipe is submitted by Caroline Greavu, our Director of Community Relations, taken from The Plant Based School. Find the original recipe here.

Ingredients:

  • 1 pound broccoli fresh or frozen + 1 gallon (3½ liters) water and 1 tablespoon of salt to boil them.
  • 12 ounces short pasta conchiglie, orecchiette, rotini, or another type.
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic pressed, grated, or thinly sliced
  • ¼ teaspoon red pepper flakes or thinly sliced red chili. Add more or less to taste.
  • ½ cup grated parmesan cheese + shaved parmesan for garnishing.
  • 1 handful basil leaves

Instructions:

  1. Cut 1 pound broccoli into small florets and boil them for 5 minutes or until fork tender.
  2. Heat 3 tablespoons extra virgin olive oil in a large skillet.
  3. Add 2 cloves garlic (thinly sliced) and ¼ teaspoon red pepper flakes and sauté for 1 minute.
  4. Remove the broccoli from the water and add them to the skillet (do not discard the water; we use it to cook the pasta).
  5. Add one cup of the cooking water and simmer on medium heat for 10 minutes or until very tender.
  6. Mash the broccoli with a fork or blend with an immersion blender.
  7. While the broccoli simmers, cook 12 ounces short pasta as per package instructions minus 2 minutes. Use the same water you used for cooking the broccoli.
  8. Drain the pasta (reserve one cup of cooking water) and add it to the sauce.
  9. Add ½ cup grated parmesan cheese and finish cooking for about a minute.
  10. Add some reserved pasta water if necessary to make the dish creamy. Taste and adjust for salt.
  11. Serve with 1 handful basil leaves and shaved parmesan on top.
